In my unbiased opinion, buffalo chicken dip may be the best food for any party/ get together. Once you start, you just can’t stop. I have yet to have a bad buffalo chicken dip (knock on wood). Now, this recipe I am going to share is very simple and may be the best buffalo chicken dip I have had yet.

I bet there are a ton of variations out there, but this one I have had numerous times and every time it turns out fantastic. Do not be fooled though, this is not my own buffalo chicken dip recipe, this is my girlfriend’s- I was given permission to share it with the world. When she makes this dip, she never follows these exact measurements either. Some would call it measuring with the heart. Usually food tastes better that way anyway. Just like the beer pizza from yesterday, this gameday item is sure to wow.

Yield: A Good amount (I have no clue)

Ingredients

  • 2 (10 ounce) cans chunk chicken, drained (more is recommended)
  • 2 (8 ounce) packages cream cheese, softened
  • 1 cup ranch dressing
  • 1 cup Frank’s red hot sauce
  • 2 cups (8 ounces) shredded cheese- cheddar, colby jack, mexican blend, or four-cheese blend

Instructions

Preheat oven to 350F 

Start with heating the cream cheese in a pot over medium heat. Heating up the cream cheese is the first step here since it is the coldest ingredient and takes a while to soften. It also helps with the mixing later on. Next, stir in your hot sauce and chicken. Continue stirring for 3-5 minutes- or until everything is well blended and warm. Once that is blended, mix in half of your cheese while it is still in the pot. 

Once everything is combined, transfer the dip to a baking dish and top with remaining cheese. Bake in the oven for 10-15 minutes or until the cheese on top is melted and looks ready to eat. Once you have taken the dip out of the oven, it can be eaten right away and served with tortilla chips, or anything you want to eat it with really, who am I to tell you what you can and can’t eat dip with.

Notes: Chipotle ranch is also an option, that is how my dad makes his. If you do not have chipotle ranch, a cup of normal ranch and a few dashes of chipotle hot sauce will do the trick. Using a rotisserie chicken is recommended but not necessary- it does taste a little better, but this can be time consuming getting the meat off of the chicken. During the mixing phase, adding a little paprika and garlic powder to the dip is never a bad idea either- kick up the flavor. If you feel like it won’t be spicy enough then you can add in an extra splash of your favorite hot sauce.
