For the next installment of our Super Bowl countdown, I am borrowing a recipe from a family friend. Now this is something that I request almost every time I see her. It is one of my favorite dishes for any event.
This taco salad is incredibly easy to make (I’m starting to notice a theme with all of these Super Bowl recipes). And, on top of being easy, it utilizes Doritos! Doritos have some of the most iconic Super Bowl commercials every year- and they are just flat out addicting. So even though this recipe calls for Doritos, we’re going to classify this one as healthy because of the salad. If you’re trying to be health conscious during the Super Bowl bring this instead of a veggie tray, no one likes veggie trays.
Time: 15min
Yield: Never enough
Ingredients
- 1 pound ground beef
- 15 ounces (1 bottle) western dressing
- 1 bag nacho cheese Doritos, coarsely crushed
- 1 cup shredded cheddar or Mexican blend cheese
- 2-3 bags ready-made salad mix
- handful of grape tomatoes (sliced in half)
Instructions
Brown ground beef, drain, and set to the side. That is it for the cooking part of this recipe. Next, start to combine ingredients. Mix together the salad mix, cheese, halved cherry tomatoes, and ground beef in a large enough bowl or tray. Do not add Western dressing or crushed up Doritos until just before serving, that way the salad doesn’t get too soggy. Use most of the bag of Doritos, but not quite the full amount.
Notes: This recipe does not add taco seasoning to the ground beef- although that is an option. Although cherry tomatoes are listed under the ingredients, they are optional. I have never had this recipe any other way, however adding onions, olives, jalapenos, etc. all seem to be options as well. If there are leftovers, put fresh crushed up Doritos on top as they can get soggy sitting in the fridge.
