Today is going to be a two-for-one special because I am feeling generous. Just kidding, the real reason is because both of the recipes can be made super quick with minimal steps. Figured one or the other would be too short to do on their own. So, we are making salsa and corn salsa today. Both of these salsa recipes will keep you reaching for more, and besides the tortilla chips you’re likely to use with them, they’re healthy options as well. First up, corn salsa-

Time: 5min

Yield: Don’t know why I keep adding this, I have no clue

Ingredients

  • 1 15 ounce can black beans
  • 1 15 ounce can corn
  • 1 medium chopped red onion
  • “lots” fresh chopped cilantro
  • salt
  • lemon juice

Combine ingredients in a bowl. Salt and lemon juice to taste and voila! Jalapenos could be added if you like spice, but not necessary.

I told you it was super quick, now to make regular salsa.

Time: Cook time 5min, Sit time >2 hours

Ingredients

  • 8-10 roma tomatoes
  • 1 medium onion (yellow or red)
  • “lots” of fresh cilantro
  • 1-2 jalapeno peppers
  • 1 green pepper
  • salt
  • lime

Combine all ingredients and chop in a food chopper or throw in a blender. Add salt and lime to taste. Let sit in fridge for a couple of hours and add salt as needed.

Each of these recipes are mostly by taste. These are both of my dad’s and there are only measurements for some of the ingredients. Play around and adjust according to what you like and find that perfect salsa recipe for your next event!
